Sugar is part of our daily diet. It is hard to fathom that the form in which we know it is quite new. It was not until the 18th century that sugar was first successfully produced from beets, but the process then quickly spread throughout Europe. It was one of the major food revolutions in modern times, and led to the formation of a new agricultural branch in Germany, as well as to the construction of sugar mills. One of the most important is Südzucker AG, founded in 1926 on the basis of several successors. On the occasion of the company's 75th anniversary, famous economic historian Manfred Pohl compiled the company's history, the technical evolution of the modern-day product "sugar" and the files on the role of the sugar industry in National Socialism. Among other things, Manfred Pohl also presents the economic and political aspects of the company's use of materials that only became available after the reunification of Germany. These days, it is no longer possible to imagine doing without "the most important and beneficial" discovery of the 18th century.
